Neapolitan Pizza Poolish

The Poolish is a key ingredient to the Neapolitan Pizza Dough. This is the starter to the dough and provides the rich flavour. The Poolish should be prepared the night before you want to make the pizza dough and up to 3 days before. The poolish can be used as a starter for between 3 and 10 pizzas.

Ingredients

  • 300ml water (warm)
  • 300g flour
  • 1.75tsp instant yeast
  • 1 small spoon honey

Directions

  • Mix all ingredients above and store in the fridge for at least 16 hours and for up to 3 days.
